Melting Chocolate Cake

A couple of months ago, I was basking in the life of luxury.  We found the best dessert ever on our cruise - ordered it almost every evening.  You know it's an obession when on the last night, our waiter brought us a paper, "thought you might want the recipe".  Oh baby!!

We finally got around to trying it a few weeks ago - I probably put off making it because it seemed a little intimidating, but it was soooo easy!!    It makes little cakes, and when you dig into them, the middle is goey chocolate deliciousness - they're super rich, so eating with ice cream is a must (I like to scoop a little ice cream into my goo).

I started the event thinking I'd do a tutorial - but this is the only "prep" picture I took.  But really, you don't need a tutorial - it's that easy. For the chocolate I got a good tip that chips are cheaper than baking squares - just be sure to buy the good stuff, and at 60% cocoa - that's dark chocolate.
Warm Melting Chocolate Cake
6 oz dark chocolate
6 oz butter
4 eggs (at room temp)
6 oz sugar
2 oz flour

1. in saucepan, melt chocolate and butter
2. in a separate bowl, mix eggs and sugar and whisk for a few minutes, then add flour
3.  add egg mix to chocolate and mix
4. pour into Ramekins and bake in 390 oven for 12 min

(oh, I forgot to mention, I don't think this is the healthiest thing ever....)

  3. It is the best! I tried making it after my cruise - it tasted like eggy cake and baked all the way - yuck. I will try your recipe - yeah!!!
