Update - my friend Renee just started a recipe blog, Sweet Enough
Here is her recipe for Chocolate Chocolate Chip cookies (we love to make them with Andes Mint Chips added - yum!!)
2 C sugar
½ C canola oil
2 tsp vanilla
4 oz unsweetened baking chocolate, melted and cooled
4 large eggs
2 C flour
2 tsp baking powder
½ tsp salt
1 C chocolate chips
(optional: mint baking chips)
Powdered sugar
Mix sugar, oil, vanilla, and chocolate in large bowl. Mix in eggs, one at a time. Stir in flour, baking powder and salt. Stir in choc chips.
Cover and refrigerate at least 3 hrs.
Shape into balls and roll in powdered sugar. Place on greased cookie sheet.
Bake at 350° 10-12 minutes or until middle is almost set. Remove from cookie sheet. Cool. Store in freezer and serve frozen.

These look so very yummy. Thanks for the link!
You had me at Andes Mints:) I was stopping over from Craft-o-Maniac. I loved this idea when I saw on Bakerella last year, but then forgot about it. Thanks for the reminder.
