Update - my friend Renee just started a recipe blog, Sweet Enough
Here is her recipe for Chocolate Chocolate Chip cookies (we love to make them with Andes Mint Chips added - yum!!)
2 C sugar
½ C canola oil
2 tsp vanilla
4 oz unsweetened baking chocolate, melted and cooled
4 large eggs
2 C flour
2 tsp baking powder
½ tsp salt
1 C chocolate chips
(optional: mint baking chips)
Powdered sugar
Mix sugar, oil, vanilla, and chocolate in large bowl. Mix in eggs, one at a time. Stir in flour, baking powder and salt. Stir in choc chips.
Cover and refrigerate at least 3 hrs.
Shape into balls and roll in powdered sugar. Place on greased cookie sheet.
Bake at 350° 10-12 minutes or until middle is almost set. Remove from cookie sheet. Cool. Store in freezer and serve frozen.
