I love the Potato Soup my mom makes – it’s a great and easy meal on a chilly day.
(random, we have bowls with decorate stripes around the rim, and plain ones – the kids call the plain ones “naked bowls” and refuse to use them. So here’s my soup in a naked bowl)
Well, I was taking dinner to our church missionaries, and normally I just package things up in a discarded cool whip container or something, but I didn’t have anything on hand. So I thought a little harder and dug out a couple of mason jars – so cute!! Soup in one, salad in the other. Minimal effort, great presentation.
I love my crockpot because I’m semi-productive in the morning, so that’s when I throw it all together. Productivity goes down as the day goes on, which is bad for dinner making.
So, there’s no “specific” recipe, but here’s the gist:
–peel and chop 5-6 potatoes into cubes. More for more soup, less for less.
–cook and dice a package of bacon
–pour the following into the crockpot and cook on low all day (maybe 6 hours?)
2-3 cans of cheddar soup
1 can of fiesta cheese soup (normally this only comes in name brand)
if you want more soup, sometimes I add in a can of cream of mushroom or cream of potato
some milk and/or water to thin out the soup to the desired consistency
1 package of frozen chopped broccoli
the prepped potatos and bacon
