{Food Contributor} Steak and Roasted Veggie Salad

Hi Sugar Bee Crafts readers!  Shannah, from Just Us Four, here again to share a delicious and ridiculously dish.

Summer is in full swing which means hot temperatures and long days.  On summer evenings, I tend to go with lighter meals that don’t require a lot of prep or ingredients.
This recipe is perfect for whatever delicious veggies you can grab at the farmer’s market.  I always like to grab the best looking squash and peppers!

What You’ll Need:
1 Zucchini, sliced
1 Yellow Squash, sliced
1 Red Pepper, sliced

Button mushrooms
1/4 cup olive oil
2 oz goat cheese
London broil or similar cut of meat
Salt
Pepper

Let’s Make It:
1)  Preheat the oven to 400 degrees.  Line a baking pan with foil.

2)  In a medium bowl, combine squash, peppers, mushrooms and olive oil.  Stir to coat the vegetables. Season with salt and pepper.  Add to pan and roast in the oven for 10 minutes.

3)  Sprinkle steak with salt and pepper.  Cook on the grill or stovetop to desired degree of doneness. Let stand for 10 minutes and slice.

4)  On a plate, place vegetable mixture.  
Top with sliced steak and crumbled goat cheese.
