{Food Contributor} Bruschetta Zucchini Bites

Hi everyone!  I’m Shannah from Just Us Four.  It is so good to be back here again to share a new recipe with you!  Tomorrow is March 1st which means the Oscars are so close.  Do you host a party to get together and watch them?  If you do, I have the perfect little appetizer for you to serve.  If you don’t, these little zucchini bites are still a great option for just about any event you might have.
These little appetizers are so easy to make and involves next to no cooking!  Plus, you can make all of the components ahead of time and just throw them together just before serving.
What You’ll Need:

- 1 pint of grape tomatoes (I used red and yellow), quartered
- 2 zucchini
- 2 Tbsp balsamic vinegar
- 2 Tbsp olive oil
- fresh basil
- grated Parmesan

Let’s Make It:
1)  Preheat oven to 325 degrees.  Slice your zucchini into about 2 inch slices.  Using a melon baller, carve out a circle in the middle of each piece.
2)  Place the circles on a baking sheet and brush with olive oil.  Bake in oven for about 5 minutes.  Remove from oven and let cool.
3)  In a medium bowl, combine tomatoes, balsamic vinegar, 1 Tbsp olive oil and 2 Tbsp chopped basil. Stir to combine.

4)  Spoon tomato mixture into zucchini cups.  Top with basil and grated Parmesan before serving.
