{Food Contributor} Strawberry Cheesecake Shortcake Recipe

Hi everyone! Shannah, from Just Us Four, back to share with you another recipe.  With summer in full swing, our meals are all about fresh fruits and vegetables.  I try to make that the case with our desserts as much as I can. It helps that strawberries are a favorite of my whole family. I was trying to decide what to make for dessert the other night and ended up combining my favorite, cheesecake, with theirs, strawberry shortcake, to create a strawberry cheesecake shortcake.

Make the best of summer's fresh fruit in this strawberry cheesecake shortcake.

This dessert is so easy to make and will be a hit with the entire table.  Fresh strawberries get a hint of extra sugar to make them extra juicy.  Then, they are combined with a cool cheesecake topping and delicious shortcakes. I promise you that people will be asking you to make this all.the.time!

What You’ll Need:
4 cups strawberries, sliced
1/4 cup sugar
2 1/3 cup Bisquick
1/2 cup milk
3 Tbsp sugar
3 Tbsp melted butter
8 oz cream cheese, softened
2/3 cup yogurt
1/3 cup sugar
2 tsp lemon juice
2 cups cool whip

Let’s Make It:
1) Preheat oven to 425 degrees.

2) In a bowl, combine strawberries and 1/4 cup sugar. Stir and set aside.

3) In a large bowl, combine Bisquick, milk, 3 Tbsp sugar and butter.  Mix until a soft dough forms. Divide the dough into 6 and drop by large spoonfuls onto an ungreased cookie sheet.  Bake for 10 to 12 minutes. Remove from the oven and let cool for 10 to 15 minutes. Split cakes in half while still slightly warm.

4) Meanwhile, beat cream cheese, yogurt, 1/3 cup sugar and lemon juice until smooth. Fold in cool whip.

5) Fill shortcakes with cream cheese mixture and strawberries.

Fresh strawberries combined with delicious cheesecake filling and a fresh baked shortcake. Yum!
